{the best egg replacer/substitute}

As many of you may, or may not, know...
Beckam is allergic to eggs.
{insert emoji gouging it's eyes out}
It's a pain. And I hate it.
Because, well, eggs are in just about everything.
And, almost nothing is as sad as telling your baby that he can't eat what everyone else is eating.
He just doesn't get it.

He could certainly live without scrambled eggs, but...
cake? cookies? banana bread?
No way.

Luckily I have found the easiest egg replacer.
CORNSTARCH.
And honestly, you can't even tell that there is a difference in the recipe when using this as a substitute.
I've tried apple sauce, bananas, flax, etc... and this is the best.
And by far the easiest.

For one egg use one tablespoon cornstarch and mix in three tablespoons water.

Stir together well in it's own bowl, and then add to any recipe that calls for eggs.
So, if the recipe calls for three eggs, use three tablespoons cornstarch and 9 tablespoons water.
Fast math, eh?

It may seem watery... at least it did to me, but it's fine. Just make sure to stir it up well.
It sets up perfectly.
And the real kicker?
You don't have to worry about getting salmonella from the excess of cookie dough you will eat.

Last night I made these delicious sugar cookies:
 We are taking them to a little kids xmas party today, and it makes me feel good that Beckam can join in on the decorating and eating without me being paranoid of having to bust out his epi-pen.

And they're delicious for all.
I don't even know why people use eggs to bake with!?

Feel free to do this trick even if you aren't allergic to eggs.
Or if you run out of eggs and are in the middle of a recipe.

Give it a try!

  1. How did you learn he was allergic? We have a one year old and I am so nervous about food allergies!

  2. There have been so many times where I have not had enough eggs for a recipe -- this is genius. I am going to have to try this!

  3. I'm allergic to quite a few things but I've never heard of a egg allergy. I love the substitute. You can probably do this for most recipes. Very nice post

  4. I didn't know that he was allergic to eggs. What a cool substitute. Funny, eggs are the one thing I can eat...how did you figure that out? Read it somewhere? I don't think I've ever read that before. Thanks!
