{recipe | fresh tomato + basil pasta}

I'm sharing another super easy recipe with you all today. 
AKA the first time I've cooked a decent meal since my last recipe post.
Don't judge.
My boys just love rice.
Mixed with a little cheese.
And half an avocado on top. 
Maybe that should be my next post.
Or not. Since I just told you exactly how I make it.
They may or may not have eaten this 4 times last week.
Ok. They did. 
There's nothing quite like being able to feed your child in mere minutes though.

Hence, today's recipe.
The 15 minutes to prepare it was almost too long.
But I prevailed.
Even with a 16 month old hanging from my shorts the. entire. time.
Seeing as though the same 16 month old had three helpings of the pasta for dinner, 
I'd say it was a success.
Or maybe he was delighted to eat something new for dinner.
Noted, kid.

My mother in law brought over a huge bag of fresh basil from her garden, and with the surplus of tomatoes from mine, I whipped up this delish fresh pasta.


10 ounces dried whole wheat spaghetti noodles
2 tablespoons olive oil
1/2 small onion diced
4 cups cherry tomatoes, quartered
1/2 teaspoon salt
1 cup fresh basil leaves, roughly chopped
1/4 teaspoon pepper
1/2 cup cheese of choice for topping


Cook pasta according to package directions.
{I bet fresh pasta would be delicious.}

While pasta cooks, heat oil in a saucepan over medium heat.

Add onion to pan and cook for about 1 minute.

Add tomatoes and salt and cook for about 4 minutes.

Remove from heat and stir in basil and pepper.

Add tomato mixture to drained and rinsed pasta.

Toss well to combine.

Top with cheese if you desire. Or don't. It's good without too.

Pow.  Dinner is served.
