{vegan spiced applesauce cupcakes}




My sweet little man just turned one a couple of weeks ago.
I had been on the hunt for a dairy free / egg free cake recipe because of his allergies.
I found this spiced applesauce recipe and was super pleased with it.

For his actual birthday I made cupcakes.


That's when we fell in love.
One of them is plenty though - they are a little more dense than a typical cupcake.

For the big party, I made some mini muffs and...
they were a huge hit with the guests.


I also made a 6-inch cake for Beckam's smash cake,
He certainly enjoyed it.
And I made sure to eat all of his leftovers.


Regardless of if you are vegan or have allergies, this cake is super yummy.
And easy.
Enjoy!


- - - Vegan Spiced Applesauce Cupcakes - - -

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup vegetable oil
1 cup granulated sugar
1 cup unsweetened applesauce, heated until warm

Directions: 

1. Preheat oven to 350°F. Line a 12/24-cup muffin pan with cupcake liners (or generously grease two 6-inch round pans with nonstick cooking spray).

2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. In a large bowl, mix together oil and sugar until sugar is dissolved. Alternately add flour mixture and applesauce and blend in, starting and ending with flour mixture. Mix until just incorporated.

3. Scoop batter into prepared pan and bake.
For mini muffins bake for about 15 minutes. {yields about 36}
For for regular size muffins bake for about 22 minutes. {yields 12}
For two 6-inch cake pans bake for 25-30 minutes.

4. Insert toothpick in center to make sure it comes out clean.
Cool in pans for five minutes before turning out onto a wire rack to cool completely.

If you don't frost them, they are still delicious.
And more like a muffin.

But... throw on some tasty frosting, and voila! Cupcake.




- - - Dairy Free Frosting - - - 
Whip 1/2 cup softened soy-free/vegan natural buttery spread (such as Earth Balance) until smooth. Mix in 1/2 cup of powdered sugar at a time until desired sweetness and consistency is reached (around 3 cups total). Add 1 teaspoon of pure vanilla extract. Beat at high speed until frosting is light and fluffy.
