{vegan cherry pie}

If you didn't read this post, you should.
First, because it explains why I have so many cherries.
Secondly, there are some ridiculously cute pics.

I opted to make a cherry pie with some of these delicious cherries.
Probably because it seemed like the easiest recipe to do vegan.

It turned out totally amazing!
And I highly recommend that you go and make it.

Here is the recipe for you:

-----   VEGAN CHERRY PIE   -----

Crust {makes 2}
3 cups flour
1 1/2 tsp. salt
1/2 cup coconut oil
1/2 cup olive oil
4 1/2 tbsp. cold water

Add flour and salt to mixing bowl.

Add oil and mix well with a fork.

Sprinkle cold water over mixture and mix well.

With hands, press mixture into a smooth ball. 
{If it is too dry - which mine was - add more olive oil. I can't say how much because I just drizzled and mixed until it was the right consistency.} 
Divide ball in half.

Roll out between wax paper.

Cherry Filling
5 cups fresh pitted cherries
4 tbsp. corn starch
1/4 tsp. salt
1 cup sugar
2 tbsp vegan butter

Toss first four ingredients together.

Pour into prepared pie shell.
Dot with butter.

Lay the top pie crust on and pinch edges to seal.
Cut slits in the top to vent.

Bake at 400 degrees for 60 minutes until it is golden and the filling is bubbling.
{You may need to add foil to the edges if it is browning too quickly.}

Cool to room temperature before slicing.
